In 1986, Max Vauché, a pastry chef from the Ardennes, opened his first boutique on the Rue du Commerce in Blois. By 2005, he had turned his dream of a chocolate empire into reality in Bracieux - nestled between the Châteaux of Chambord and Cheverny - with a combined production atelier, guided-tour venue and visitor experience. In recent years, the brand has expanded its Bean-to-Bar ranges with beans from Mexico and Colombia, opened new boutiques in Vendôme and Tours and is building a second production site in Bracieux close to the original one.
Visitors to the chocolate factory in Bracieux, which is just a few kilometres away from the Châteaux of Chambord and Cheverny, can explore a magical world of chocolate. The shop is a treasure trove of pralines, ganaches, bars and seasonal creations, while the Choco'bar invites guests to linger over hot chocolate or gourmet treats. Tastings allow you to sample the house specialities, and the guided tour (available in English at certain times of year) takes you from a plantation-style greenhouse through to the atelier du couverturier, explaining every step from cocoa bean to finished chocolate.
What makes Max Vauché's creations so special is the blend of craftsmanship, innovation and respect for tradition. The chocolatiers carefully roast and transform beans from carefully selected origins, highlighting their unique aromatic profiles. Signature pralines, velvety ganaches and playful inventions such as the Larmes de Cerf demonstrate the house's flair for combining high-quality ingredients with artistic presentation, ensuring that every product delights both eye and palate.
